"Carrie Peters was determined to open her own bakery one day."

"A year-long stint at one of the most celebrated bakeries in New York has helped her achieve that goal at the age of 26."

" 'I didn't want to be 70 years old thinking about how I wanted to open a bakery,' said Peters, owner of Caroline Ware Confections in Canton Mart Square in Jackson, which specializes in custom-designed cakes, cookies and petit fours for weddings, showers, birthdays and other celebrations.
Peters, who wants to be known for creating pretty cakes that taste as good as they look, worked with Elisa Strauss, owner and designer of Confetti Cakes, a New York bakery known for elaborate, made-to-order cakes."

"Strauss, 29, considers cake design an art form and boasts a roster of famous clients that include fashion designer Ralph Lauren, shoe designer Manolo Blahnik, cosmetics designer Bobbi Brown and New York Mayor Michael Bloomberg."

"I saw one of her cakes in Food & Wine," Peters said. "I fell in love with her style. I faxed her my resume once a month for a year."

"Peters eventually bought a one-way ticket to New York where she begged Strauss for a job — and secured one"

"Strauss, whose cakes start at $800 and have been featured in magazines from Modern Bride to Seventeen and on TV shows from Today to Sex and the City, said she receives five to 10 resumes a week from culinary students seeking internships and jobs."

" Strauss said Peters has many attributes needed for success."She's really responsible, has a great attitude and was good with whatever I asked her to do."

"Like Strauss, Peters knows how to decorate cakes with roses, ribbons and ruffles made from sugar. She's also skilled at painting delicate watercolor-like designs on cakes"

"Peters, whose full name is Caroline Ware Peters, grew up in Louisville and has a bachelor's degree in food science and nutrition from the University of Alabama and an associate degree from the Scottsdale, Ariz., Culinary Institute."

"Kerry Parker of Jackson, who confesses to not only having a sweet tooth but also being a chocoholic, said the desserts Peters create are special. "There's a flair to her desserts that you can tell comes from her professional training and dedication," she said.

"While it's not possible to dash in and purchase an entire cake without having ordered it ahead of time, it's OK to stop by the bakery, located between Knit Wits and Monogram Magic, for a cup of coffee and to sample a slice."

"I love doing custom designs, and I also like for people to come in all day long," she said. "A round table in the center of the bakery holds several cake stands covered with domes, each of which features a different dessert.White tables and chairs provide seating."

"Peters plans to add Japanese tea and gourmet chocolates to the menu."

"The walls feature watercolors of — what else? but cakes — painted by Peters.
Whole cakes range from $38 for lemon pound cake to $42 for traditional ones such as carrot cake with cream cheese icing or chocolate or vanilla birthday cake. Custom-designed cakes start at $60, and wedding cakes start at $3.75 per slice. Brownies are $20 per dozen, and chocolate chip cookies $6 per dozen."
